What do you do when you need a quick dessert and have lots of avocado on hand? Avocado Lime Pudding! I found this recipe when I was looking for a key lime pie recipe, but this is so much simpler. No crust, no baking, and whips up in minutes.
Serve this pudding chilled, topped with chopped mango and a sprinkling of toasted nuts. For an extra treat, serve a dollop of the pudding on top of gingerbread cake!

- 3 medium avocados
- 4-6 tablespoon lime juice (2-3 limes)
- ½ tsp vanilla
- 2 tablespoon liquid sweetener (agave or maple syrup), or sweeten with stevia
- dash salt
Put all ingredients in the blender or food processor and blend until smooth.
Best served when chilled.
